Google’s Health Connect could support multiple user profiles on your device

TL;DR A future Android update may finally let multiple user profiles access Health Connect. Health Connect currently supports only one user, but code in the recent Android 17 QPR3 Beta 2 suggests that could change. If implemented, this would let multiple users manage app permissions and view or delete their existing health data, all from one device.
